My daughter bought a brick of this for me for the holidays. She had assisted with a documentary on cheese making and this was one that stood out after much of her travels and I have to say I am a little resentful. I am no longer in the least bit interested in store bought cheddar cheese. This cheese has ruined me and I will forever be ordering it for myself and my friends and family so that they can understand that little else is even worthy in comparison. You can’t ever go back. The sharp bite, those salt crystals snapping, the delicious crumble and huge flavor in a tiny bite… It’s everything.
